Cuisine en Locale: The Can

I recently read that the only veggie cans that aren't lined with a material that contains BPA are Eden Organic Beans
And that tomatoes are especially bad because they are so high in acid
I am so relieved that it is almost farmer's market season and I am not going to have to worry about this for too much longer.
This august the tomatoes go into glass jars!
Hang in there everyone- many markets opening, some near you, the first of June!

This week's Bill Moyers Journal had a segment about BPA and federal agencies like FDA and EPA have not been regulating it in spite of studies indicating a problem. They follow the Milwaukee Journal Sentinel reporters who broke the story. Their series, Chemical Fallout, is here.
