The lovely ladies of the brand new bartending service, BOOZE EPOCHE, joined the gypsies of ONCE on Martha's Vineyard for a gorgeous field dinner at MORNING GLORY FARM. Here is their account, click through for more pictures:
Given some legal and logistical constraints we weren’t able to plan a menu until we arrived on the farm two hours before service using only in-season ingredients from the farm itself. We bartended at Burning Man covered head to toe in dust scavenging fresh fruit and prosecco from RVs, so we figured we could pull it together in time.
We typically use local and seasonal ingredients as much as possible, but we do often use organic citrus, melons, and other fruit that is not locally sourced and we always plan our menus well in advance. ONCE was an interesting and welcome challenge for us that forced us to think a little further outside the box than we normally do.
